White Chocolate Chip Raspberry Oatmeal Cookies

I almost didn't share this cookie recipe because they kinda do this freaky magic trick after they're baked. Then I decided that might almost be a sin because they are so tasty and keeping this to myself would be just plain selfish. Plus it kind of makes me feel silly that cookies know more magic tricks than I do. Sheesh.

Now about that magic trick...

The cookies turn blue.

I know it sounds gross and weird, but once you get over the fact that the baked raspberry juice swirled in the cookies turns blue, you can accept the fact that these are the new best cookies around. 

Look out, Oatmeal Raisin; White Chocolate Chip Raspberry Oatmeal is gonna give you a run for your money. 

Ugh, never name your child something remotely close to White Chocolate Chip Raspberry Oatmeal in sound or length. The kid will endure many hardships. 

White Chocolate Chip Raspberry Cookies

1/2 cup butter
1 cup brown sugar
1 egg
1 tsp. vanilla
1 1/2 cups flour
1/2 cup quick cooking oatmeal
1/2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. cinnamon
1 cup white chocolate chips
3/4 cup fresh raspberries

Preheat the oven to 350ยบ.

In a mixing bowl, cream together the butter and brown sugar. Add in the egg and vanilla.

In a separate bowl, whisk together the flour, oatmeal, baking soda, baking powder, and cinnamon. Add to the butter mixture. Mix in the white chocolate chips. Gently fold in the raspberries.

Using a small cooke scoop, scoop the dough onto a cookie sheet lined with parchment paper, leaving at least 2 inches in between. Bake for 7-8 minutes, or until the edges are lightly browned and the centers are set.
