Cookies & Cream Cupcakes

Happy Valentine's Day, all! Have you been feeling the looooooove?

As you can probably tell, love, pink, and sparkly hearts really aren't my thing. I'm all about the chocolate. And what's more appropriate for a day like today than some chocolate cupcakes?!

These aren't just any chocolate cupcakes; they're OREO cupcakes. Almost everyone loves Oreos, so that basically means that these cupcakes are a symbol of love and thus, perfect for a day like today!


You know what I think COMPLETELY makes these cupcakes? (Besides the awesome surprise of an Oreo cookie on the inside, of course! And no, I didn't get a picture. My bad.) The frosting...it tastes exactly like Oreo filling! I am not even joking here, people. My sister actually asked me if the frosting was from the filling, as in I smashed all the middles together and spread them on top. 

Not only is the frosting perfect, but the cupcakes are my favorite chocolate cupcake recipe from Annie's Eats. They're moist, chocolaty, and are perfect for this recipe. People might just bow at your throne of cupcakes if you make these for them. I know the recipe looks a little long and overwhelming, but it really isn't once you read everything through. But they're totally worth it!


Cookies & Cream Cupcakes
{cupcake recipe from Annie's Eats}

1/2 cup + 1 T. cocoa powder
1/2 cup + 1 T. hot water
2 1/4 cups all-purpose flour
3/4 tsp. baking soda
3/4 tsp. baking powder
1/2 tsp. salt
2 sticks + 1 T. butter, softened
1 2/3 cups sugar
3 eggs
1 T. vanilla extract
3/4 cup sour cream
approx. 27 regular stuffed oreos (enough to put in each cupcake)

Preheat the oven to 350ยบ F. 

In a small, heatproof bowl, mix together the cocoa powder and hot water until smooth. In another medium sized bowl, whisk the flour, baking soda, baking powder, and salt. 

Beat together the butter and sugar with an electric mixer. Add in the eggs, one at a time, mixing well after each addition. Blend in the vanilla and cocoa mixture.

With the mixer on low speed, add the flour in three additions alternating with the sour cream, beginning and ending with the dry ingredients and mixing each addition just until incorporated. Set aside.

Take the oreos and cut each in half, making sure to leave all (or as much as possible) of the filling on one side of the chocolate wafer. Take the wafers with the frosting and set aside to use later. Chop up the remaining wafers for garnish (if desired). Otherwise you can go ahead and eat them! (Confession: the chocolate part is my favorite!)

In a cupcake pan prepared with liners, scoop a small amount of batter into the bottom of the liners. Place the halved oreo with the filling in each. Top with more batter, filling until 3/4 full. Bake for 17-20 minutes. The cupcakes will be done when the cake springs back when touched. Let cool completely and frost.

Oreo Cream Frosting
1 1/2 cups vegetable shortening
2 tsp. vanilla
1/2 tsp. almond extract
3 - 3 1/2 cups powdered sugar
2-3 T. milk

Using a mixer, combine the shortening, vanilla, almond extract, and powdered sugar. Mix on VERY LOW speed. This is important because you don't want a ton of air mixed into the frosting. You want it to be thick and dense, much like an oreo filling. Add in the milk, 1 T. at a time. Add in enough just until it reaches a spreading consistency. Once again, you want it to be thick and dense. 

Makes approx. 27 cupcakes
Cupcakes are best if stored in an airtight container and eaten within 2-3 days.
