Yesterday I at my guts out, Superbowl Party style.
I have never been to a Superbowl party before, and I am not sure if I will ever return. I ate so much I think my stomach has expanded to unrealistic sizes. And THIS DIP?! So addicting. I ate WAAAAAY too much of it because it was honestly one of the best things. Ever. I could eat it for forever and ever amen. If I could choose one last dessert I would ever eat, it would be that dip.
Anywho, I made butter cookies. (As if I/you haven't stared at enough sweets to satisfy me/yourself for the rest of my/your life.) I've seen a lot of different recipes for them recently, but I first found out about them from Karly. I was basically like, "Yeah. Makin' those." And waddya know? I did. Except I used a brownie mix because I felt like it, and it created a rich, gooey, chocolate butter cookie that is unlike anything you've ever tasted. Unless of course you've had a Gooey Brownie Butter Cookie before, in which case, you're set for life.
Gooey Brownie Butter Cookies

1 box brownie mix
1 egg
1 - 8 oz. block cream cheese
1/2 cup (1 stick) butter, softened
powdered sugar, for rolling
Preheat the oven to 350ยบ. Line a cookie sheet with parchment paper.

In a mixing bowl, cream together the cream cheese and butter. Beat in the egg. Add in the brownie mix and mix until combined. The dough will be thick and sticky.
Pour some powdered sugar into a dish. Using a cookie scoop, scoop the dough and drop it into the powdered sugar. Roll around until completely covered. Repeat with the rest of the dough. Place the sugar covered dough balls onto the baking sheet, leaving about 1 1/2 inches between each.
Bake for 15 minutes; begin checking after 10 minutes of baking. The centers should be set and not too incredibly gooey and jiggly.
Makes approximately 30 cookies.
