Peanut Butter Cup Chocolate Chip Cookie Bites

So I just wanted to let you all know that I made you your afternoon snack that you're going to love so much that you'll probably eat if for every single meal of the day. Just a small warning for you, but it's one that you'll probably ignore because, let's face it, when chocolate, peanut butter, and cookies come into any picture, all good judgment sort of turns off.

Really, who can resist THIS!?


If food can be called cute, I'd say these are just that. They're perfectly portioned, bite sized, and downright tasty!

What you do is take some cookie dough and scoop it into a mini muffin tin. Then you press a peanut butter cup into the middle, and bake for only a few minutes. Just like that you have a tasty cookie and peanut butter treat that everyone will love. There's not much that's better than a chocolate chip cookie and peanut butter cup!


Peanut Butter Cup Chocolate Chip Cookie Bites
{cookie recipe adapted from HERE}

1 stick butter, softened
3/4 cup light brown sugar
1/4 cup white sugar
2 tsp. vanilla
1 egg + 1 yolk
1 T. cornstarch
1/2 salt
1/4 tsp. baking soda
1 3/4 cups flour
1/2 cup mini chocolate chips
about 36 peanut butter cups

Preheat the oven to 350ยบ. Grease a mini muffin tin with cooking spray.

In a mixing bowl, cream together the butter and sugars. Add in the vanilla, egg, and egg yolk.

In a separate bowl, whisk together the cornstarch, salt, baking soda, and flour. Add into the butter mixture. Fold in the chocolate chips.

Scoop 1 T. of dough into each hole of the muffin tin. In the middle of each, press a peanut butter cup. Bake for about 6 minutes. The edges should be lightly golden brown. Remove from the oven, and if needed, run a knife around the bottom edges of the cookies if they bake over a little so that they don't stick. Cool for 5 minutes before removing to cool completely. Store in an airtight container.

Makes 3 dozen (36) bites.

NOTES: I bought a bag of peanut butter cups, and it only had 30 in it. Instead of buying 2 bags just to get 6 more peanut butter cups, you can go ahead and make the remaining dough into cookies or into cookie bites without the peanut butter cup if you want.
Also, my cupcake pan was very dark, so you may need to bake yours for a minute longer.

  1. oh my gosh! I must be dreaming. Why have I never thought to do this? they look incredible! I love reese's peanut butter cups so much. :) Peanut butter and chocolate is always a winner in my book!
